High fibre easy pancakes

           Ingredients

  • 1 cup oat milk, unsweetened, without added oils
  • 1/2 cup gluten-free oats
  • 1/2 cup flaxseeds
  • 1 tablespoon protein powder (I use pea protein)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon bicarbonate of soda aluminium free
  • 1 medium banana
  • 1/2 teaspoon vanilla extract
  • a pinch teaspoon pink salt
  • 1 tablespoon coconut oil

Instructions

Place all dry ingredients into a good-quality blender. Blend until oats and flaxseeds are ground and everything is mixed well. Add the banana, oat milk and vanilla extract and pulse until incorporated. mix well.

Heat a nonstick pan over medium heat and melt a teaspoon or two of coconut oil. Pour about 1 full tablespoon of batter onto the griddle for each pancake. Cook until browned on each side (about 2 minutes on each side)

Serve warm with maple syrup, coconut yoghurt and fresh berries if desired. Enjoy!
