High fibre easy pancakes
Gluten-free Dairy-free Vegan
Ingredients
- 1 cup oat milk, unsweetened, without added oils
- 1/2 cup gluten-free oats
- 1/2 cup flaxseeds
- 1 tablespoon protein powder (I use pea protein)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon bicarbonate of soda aluminium free
- 1 medium banana
- 1/2 teaspoon vanilla extract
- a pinch teaspoon pink salt
- 1 tablespoon coconut oil
Instructions
Place all dry ingredients into a good-quality blender. Blend until oats and flaxseeds are ground and everything is mixed well. Add the banana, oat milk and vanilla extract and pulse until incorporated. mix well.
Heat a nonstick pan over medium heat and melt a teaspoon or two of coconut oil. Pour about 1 full tablespoon of batter onto the griddle for each pancake. Cook until browned on each side (about 2 minutes on each side)
Serve warm with maple syrup, coconut yoghurt and fresh berries if desired. Enjoy!
